Lazy Meals for Lazy Days


Hey Reader,

After taking a few weeks off, I'm back in the kitchen and behind the computer - but oh, is it hard to get back into routines! One thing that always suffers for me after a vacation like this is cooking.

Even if I usually love it, combining work and hobbies and cooking with everything else that needs to get done suddenly feels totally impossible.

That's when I reach for these super easy meals! I call them lazy because they are so easy to make. But don't think that makes them any less delicious!

You'll love these dishes, and you'll want to keep them on hand for busy seasons ahead.

Cheesy Tortellini Casserole

This cheap & cheesy Tortellini Casserole has been my go-to easy dinner for 17 years! It's so easy with just 5 ingredients but lots of flavor. Boil the tortellini halfway, then dump, bake and serve! It also heats up really well for delicious leftovers!

Thin Basil Chicken Breasts

Slicing chicken breasts in half makes them cook up sooo quickly. Season them generously with garlic and basil, then cook in your air fryer, in a pan, or on the grill. Quick, easy, and so flavorful!

Lemon Ricotta Pasta

OK, now this is a REALLY quick one! The sauce is made without any heat, then pair with fresh pasta for the fastest version. Loaded with lemon & garlic flavors for a cheesy pasta that's a great main course on its own, or serve as a side for your favorite protein.
