3 recipes you should try before summer ends

Hey Reader,

Summer is still going strong here, but evenings are getting darker and the nights are getting longer. And sometimes I can feel a distinctly fall-y crisp in the air...

Now, I LOVE fall above all else so this doesn't make me too sad. But, there are a few recipes I want to make sure I make before fall really hits. And I think you should try them, too!

These are some of my all-time summer favorites, and I definitely need to make them at least once more this season.

Extra Everything Burgers

I made these Halloumi Portobello Burgers with Extra Everything for my friend the other week and she called it the best meal she'd had all year!

Shopska Salad

I like my salads best when they hide under lots and lots of cheese. And this Shopska Salad does just that! It's loaded with colorful veggies, dressed in a simple vinaigrette and topped with shredded Feta cheese. Similar to a Greek salad - just even better!

Cucumber Collins

This super refreshing Tom Collins mocktail is just as delicious as the original - but less sweet, and without the booze. Cucumber, lemon & soda water is all you need!

Enjoy your lazy days!

Hey Reader, When it's hot out, dinner should feel light. The caprese is my go-to when tomatoes are this good. Three ingredients is plenty, and it's hearty enough to call a meal. From there, the salmon tacos with ginger-avocado salsa and the larb gai keep things fresh and bright. And that cabbage salad has been in regular rotation for YEARS... Hey Reader, After taking a few weeks off, I'm back in the kitchen and behind the computer - but oh, is it hard to get back into routines! One thing that always suffers for me after a vacation like this is cooking. Even if I usually love it, combining work and hobbies and cooking with everything else that needs to get done suddenly feels totally impossible. That's when I reach for these super easy meals! I call them lazy because they are so easy to make. But don't think that makes them any...

Hey Reader, Pasta doesn't have to mean a heavy dinner. These are my warm-weather favorites - light, fast, and a couple of them just as good cold the next day. The red pesto one is my on-repeat summer pick (great straight from the fridge), but the garlic butter shrimp and cherry tomato versions are right behind it.
