Hey Reader,

If you've been around here for a while, you know I struggle HARD to eat my veggies. I just don't have the energy to cook dinner, AND veggies, in between taking care of my dog and horses, working out and trying to get some actual work done (like writing you this e-mail ;) ).

BUT these salads are so good, even I make them regularly. Not every day, definitely not - but I make one of them at least once per week. And now in summer, I often make the first one multiple times each week!

So if you also struggle to eat your veggies, then try one of these - adding lots of cheese, ranch dressing or lots and lots of sun-dried tomatoes really makes veggies go down so much easier.

Shopska Salad

Ranch Coleslaw

If you're not adding ranch dressing to your coleslaw, what are you even doing with your life?! Up your salad game, the easiest way.

Arugula Salad With Sun-Dried Tomatoes

There just is no better side for steak! It's sweet, acidic and a bit peppery - and totally delicious.
